Grilled Tomato & Basil Cream Cheese Muffins
WHAT YOU NEED
– 200g Cream cheese
– handful fresh basil leaves
– a good pinch of salt
– 1 sliced spring onion
– 2 Large English muffins
– 1 tablespoon cooking oil
– 2 Beekist® Farmers Harvest Tomatoes
– milled black pepper
HOW TO MAKE IT
In a blender, place the cream cheese, basil, salt and spring onion. Blitz well until smooth. Set a frying pan on to heat with the oil. Slice the tomatoes in half and sear well in the pan on both sides. Meanwhile, cut the muffins in half and toast until golden.
Smear the cream cheese onto the warm muffin halves and place on 2 plates. Top with the tomatoes. Finish with a good grind of milled black pepper.
